GAIN Food Defence

A core element to the defence of food is a systematic evaluation of vulnerable elements of the supply chain carried out by an experienced and trusted team. Two of the tools for performing evaluation has been called Threat Assessment and Critical Control Point (TACCP) and Vulnerability Assessment and Critical Control Points (VACCP). This reflects established procedures for risk management and it is likely that organisations will increasingly incorporate it into crisis and / or business continuity management frameworks.

The Food Defence session, will recognise the threats and vulnerabilities to food businesses

Covering:

• Assess an understanding of the principles of food authenticity and integrity

• Understand & Recognise the different types of threats and their potential source

• Prepare or Develop further a approaches for integrity and authenticity

AssessmentDelegates will complete skills analysis of a practical task, Setting SMART objectives, designing a training plan, Selecting instructional techniques, Assessment and feedback. Leading to a University of Lincoln certificate.

Mat has a background of over 20yrs experience working with the food sector, undertaking projects on food quality and safety, through to the development and delivery of a range of specialist, work based courses at all levels including FdSc and BSc (Hons) programmes within education. Mat has also undertaken project work with the United Nations Industrial Development Organisation, worked with educational institutions in Athens in readiness for the 2004 Olympics and developed a range of industry led consultancy and skills development programmes for organisations of all types and sizes, from chocolate to wine, meat and vegetables, fish and seafood, covering food safety management, authenticity and integrity and quality. Mat has worked on business facing projects, co-authored and contributed to text books and papers including Food Authenticity and Integrity, HACCP and Food Safety.

This is a must for any food business.
